Thanks ya'll for your thoughts and comments. I am considering your suggestions.

Just a few comments. The under tray has always been in place, but thanks for discouraging me considering removing it to get more air.

Have not yet replaced the coolant sensor. Even if it does not fix the problem at least we would eliminate it.

Fans are "pull" and set for both to come on simultaneously. 1,700 CFM. Shrouded. Yes, there is a strong flow front to back.  Here is the link to the ones I've installed: http://fatcatmotorsports.com/fanshroud.htm

Sealing up the air "escape routes" from the "mouth" entry past all the hardware, especially on the sides, is now, based on your suggestions,  being seriously considered. Just trying to determine the best way e.g. plastic or aluminum panels, or test with temp cardboard & duct tape and finding a shop which will work with me and use their lift.

I've "velcroed" the Link keypad to the dash so I can monitor the temps. Yes, well known (supposedly) that the stock Miata water temp gauge is very inaccurate.

Monica: I'm amazed that anyone in Texas would drive their car at 110F without the A/C on!! I appreciated your comments. Especially re the "FM Extraction Hood". Could you send me your mechanics e-mail address?.  I had posted an earlier inquiry on this forum asking for user feedback on the extraction hood but got zilch responses.  Because of the cost, approx $800.00 after paint, etc., that would be my last thing to try. BTW: My FM II - Link dynoed out at 264RW HP. 

Some one else has suggested doing an aggressive cooling system, rad, block, etc. flush. May remove some scale which could be inhibiting cooling efficiency. Rather cheap, It wouldn't hurt, may try that also. Any thoughts?

It may well be that no single item will have a significant (lowering by about 20Deg C) effect, but the sum of all implemented items may "do it".
